Job Overview

Our client Komicx Fishing, based in Kommetjie, Cape Town is a fully integrated fishing enterprise with a state-of-the-art NRCS, EU, FSA and GACC approved fish processing facility, is seeking to appoint a Junior HACCP Clerk. This newly created role will support the HACCP Co-ordinator and Factory Manager in monitoring, documenting and implementing food safety systems across the processing factory. The position is designed to strengthen internal compliance frameworks and ensure continued alignment with international food safety standards.

 

Job Description

  • Daily and monthly operation and sanitation inspections
  • Data logger downloads (weekly)
  • Freezer room inspections (weekly)
  • Pest Control inspections (weekly)
  • Thermometer verifications (weekly)
  • Daily (hourly during production) metal detector checks
  • Collecting of and filing of all HACCP documentation required (daily)
  • Collection of incoming fish HACCP documentation
  • Ensure HACCP files are always up to date
  • Sending thermometers for repairs/calibrations
  • Arranging of samples for NRCS inspection for clients
  • Organise annual staff medicals
  • Monthly swobs of water and ice for testing
  • Final product inspections
  • Daily checks of yard, ice plant and factory – clean, tidy, good condition
  • Support HACCP co-ordinator with audits
  • Taking minutes of HACCP meetings
  • Assist with QC checks as required
  • Support HACCP team with any other items that may arise from time to time

 

Minimum Requirements

  • Grade 12 / National Senior Certificate (essential).
  • Certificate or Diploma in Food Safety, Food Technology, Quality Assurance, or related field
  • Basic knowledge of HACCP principles, food safety systems and regulatory requirements.
  • 1–3 Years experience in a food processing, manufacturing, or quality control environment
  • Computer literacy (MS Office: Excel, Word, Outlook).
  • Strong administrative and record-keeping skills.
  • Good communication skills and ability to work under supervision
