Job Description

Meat Preparation & Cutting

 

  • Break down carcasses into primal and retail cuts according to specifications
  • Prepare meat products for display, sale, or further processing
  • Trim, bone, portion, and pack meat for retail and bulk customers

 

Hygiene & Safety Compliance

 

  • Follow food safety and hygiene regulations at all times
  • Ensure work surfaces, tools, and equipment are clean and sanitized
  • Properly store meat products to maintain freshness and quality

 

Waste Management

 

  • Ensuring that waste is kept to a minimum, by utilizing as much of the carcass as possible thereby increasing the financial return on the cost of a carcass.

 

Customer Service

 

  • Assist customers with meat selection, portioning, and special requests
  • Offer product knowledge and cooking advice when required
  • Provide friendly, efficient, and professional service

 

Stock Control & Display

 

  • Monitor stock levels and report low inventory to management
  • Rotate stock to minimize waste and ensure freshness
  • Assist with merchandising and product presentation in the meat display area

 

Minimum Requirements

  • Proven experience as a blockman or butcher
  • Experience with waste management, is essential.
  • Knowledge of meat cuts, processing methods, and hygiene practices
  • Physical strength and stamina to work on your feet and handle heavy products
  • Good communication and customer service skills
  • Ability to work in a cold environment
  • Relevant qualifications or trade certifications (advantageous)
