Requirements:

• Must live in Cape Town
• Matric or equivalent
• Diploma: Hospitality Management preferable
• First aid certificate advantageous
• Firefighting certificate advantageous
• IR experience advantageous
• Previous experience in a Restaurant Management (GM) or FOH Restaurant Management role
• To be able to work under pressure, for long hours
• To keep high standards of personal hygiene, clean uniform and overall camaraderie

Duties & Responsibilities:

• Manage the restaurant within the policies and guidelines of the company to ensure customer satisfaction and profit maximization
• Total operational and financial responsibility for the restaurant
• Directly performs hands-on work on an on-going basis to train employees, respond to customer service needs, or otherwise role model appropriate behaviour in the restaurant
• Provide overall leadership, recognize and motivate members of the team, coach and train the team for operational excellence
• To take ownership of the restaurant and fully manage the site
• Control profit & loss by following cash control procedures, maintaining inventory, managing labour, reviewing financial reports and taking appropriate action
• Recruit, interview and hire team members, conduct performance appraisals, take disciplinary action, motivate, mentor, coach and train team members
• Ensure maintenance of equipment and facility using a preventative maintenance plan based on company standards
• Lead by example in all areas by becoming the expert in all aspects of the restaurant, interacting with guests and being present during busy service periods
• To be a team player always and be prepared to be flexible to ensure that all operations are always as guest focussed, efficient and profitable as possible
• To ensure the menu, drinks offering, service levels and support are always available according to the Food company’s standards
• To develop and maintain excellent, positive and progressive relationships and open communications with the team always
• To deliver high quality detailed pre-shift briefings before every service to improve product knowledge and service quality
• To help deliver high quality day one induction training for all staff and ensure that all team members have up to date and complete personnel files
• To attend all training sessions and briefings as required and encourage team to do the same
• Understand and comply with all regulations that pertain to health, safety and labour requirements of the restaurant, employees and guests
• Maintain all HACCP files and training records for inspection
• To liaise with the kitchen on daily operations and assist in food safety and quality control
• To use external audits as a positive development tool and complete all actions in a prompt and effective way
• To supervise all stock takes and ensure all necessary paperwork has been compiled correctly for reporting
• To ensure an accurate stock result brief is prepared for meetings and feedback from the previous week’s financial results and minutes
• To ensure accurate staff rosters are compiled to maximise service levels and ensuring employment percentages do not exceed budget
• To drive service delivery and targets to ensure that monthly forecasts and budgets are met
• To strive for the achievement of service and quality standards
